Yet again after a busy busy weekend away I found myself staring into a rather sad looking lunchbox of my little man. “Lunchbox Stress” is something I often suffer with. The first time I had to make Dylan a packed lunch I kind of went into melt down. What if I put the wrong things in? What if I put too much in there? What if there wasn’t enough in there? What if there was a lunchbox policy that I wasn’t aware of? Oh my goodness, my brain kind of broke. I think my husband thought I’d actually lost the plot! So let just say I have previous with stressing out over these matters.
As I was making dinner today, chinese style chicken curry and very nice it was too, I thought I’d bung a few things together to make some healthy (ish) bites to pop in the little dude’s pack-up to make it more exciting for him. Yep, bung a few things together… Sounds yummy doesn’t it, bunging. Haha. They actually turned out pretty good too! The recipe is below for y’all to give it a go if you fancy it.
For the Cake…
3 very ripe Bananas, mashed up
100g Self Raising Flour
50g Caster Sugar (or soft brown sugar would be great too)
60g Vegetable Oil
30g Porridge Oats
For the topping…
50g Porridge Oats
2tbsp Caster Sugar
Put all the cake ingredients into a bowl and give them a really good mix. The batter will be quite lumpy but should be all mixed together.
Line and oil a 22cm square baking tin. I find the best way to line one of these without a massive amount of faffing about is to approx your piece of baking parchment and then scruntch it up like it’s a piece of paper that a teacher has clocked you drawing willies on and then unfurl it and press into the corners of the tin. Trust me, it works!
Now pour the mix in. Mix the topping ingredients and then sprinkle all over the top of the cake mix and pop into an oven that has been preheated to 180 and bake for about 30-45 mins. You want the top to be browned and the mix to be totally non-wobbly.
Either serve with a load of warm custard or leave to cool and then wrap up and pop into a lucky little’s lunchbox
