Beetroot and Chickpea Burger Recipe

So last Sunday we went to our first Hypnobirthing lesson and I will definitely blog about it after part 2 of the course. The course itself took place at a place called the Ministry of Yoga in Crewe and there was an amazing vegan cafe there too. We went for a coffee and then for lunch during our class. The coffee was lovely, the smoothie I had was amazing and the burger was incredible. Everything they sell there is vegan and all the things I tried were yummy.

Anyway, I have been dreaming about that burger a little bit since… ok, a lot. So I thought I would try to make my own! My version isn’t quite as good as the one in the cafe but it was pretty darn close! So here you go… My version!

1 cup cooked Brown Rice
1 tin of Chickpeas
2 cooked Beetroots
1/2 cup of Breadcrumbs
1tsp Garlic granules
2tsp Smoked Paprika
1tsp Cumin

I decided to microwave the chickpeas for 1 min to get rid of some of their tinny-wetness and then I chopped up the beets into little chunks and did the same to that to get rid of some of their wetness too. Then stick everything into a food processor and whizz until it’s all mixed and smushed up. If you’d prefer a more chunky then you could just use a masher or a fork. Scoop out the mixture with a 1/3 cup measure and pop onto a well oiled tray. Shape the burgers and then pop them into the oven (preheated to 180) for 30mins. After about 15mins flip the burgers. Serve in brioche buns with rocket, avocado, slices of beetroot and gherkins (the gherkins are VERY important)
